The Happy Farmer food philosophy

A culture of caring

Our offerings bring to mind lush vegetable gardens, and forests brimming with juicy berries and flavoursome mushrooms. We follow the seasons, which can be seen and tasted in all our food and drinks. The best flavours of the garden and forest are stored at just the right moment.

Our mission

We prepare foods based on the values of sustainable development, and we are developing HOK-Elanto’s restaurant culture to become even more responsible.

We produce delightful and innovative dishes with Nordic flavours and an international touch. Our choices of ingredients are determined by global and local harvests. Our offerings are simple, fair, delicious and fun - we believe in healthy, tasty food that is good for you and the environment!

A relaxed and immediate, genuine atmosphere of caring is guaranteed.

In our kitchen, there is a strong emphasis on vegetarianism. We put vegetables first, which means careful preparation of vegan and vegetarian dishes with a passion.

Our aim is that at least 70 per cent of the offerings on our menu are plant-based.

Climate-friendly Finnish fish has found its place next to other sustainable seafood.

We choose our meat suppliers carefully, because animals raised in good conditions with the right kind of nourishment have a better quality of life. This also ensures the best-tasting meat.

Happy Farmer’s values

We strive to achieve great things that we can be proud of. We have three core values that guide our work and our culture every day:

1. We are aware and committed

We are responsible for the future. Every decision we make has a meaning. We are committed to bringing about a shared sustainable future in accordance with our values as well as to preserving the diversity of nature.

How do we do it?

  • Our goal is that vegetables account for at least 70 per cent of the items on our menu.
  • We are a carbon-neutral restaurant.
  • We use Finnish vegetables and other produce whenever possible.
  • We follow S Group’s fish policy, and we never put fish or shellfish that are endangered, threatened or subject to overfishing on our menus. Read more
  • The coffees and teas we use are certified for responsibility.

2. Always delicious, with respect for ingredients and minimal waste

We prepare mouth-watering foods from responsibly produced ingredients. Transparency in the food production chain and choices of ingredients is important to us. We strive to make the most of seasonal produce and to minimise food waste.

How do we do it?

  • Our menus are planned with both local and global seasonal produce foremost in mind.
  • Our chefs keep food waste to a minimum and make use of surplus ingredients. We aim for zero waste wherever possible.
  • We use surplus produce from the nearby S-market supermarket in food preparation.
  • We only buy from suppliers whose produce can be traced to their origins.
  • We only use Finnish meat that is produced with consideration for animal welfare and the values of sustainable development.
  • We do not compromise on food safety. Read more

3. We are curious and eager to learn

The world is changing and developing at a rapid pace. We are always learning more and actively follow the world around us - we are constantly developing our operations and looking for innovative solutions.

How do we do it?

  • We reduce the amount of rubbish created through careful selection of packaging and containers.
  • We encourage our suppliers to climate friendly food production.
  • We want to promote the necessary measures to combat climate change.

Ingredients and suppliers

All the ingredients we use are carefully selected.

We use foods from the S-market supermarket downstairs, and work with the supermarket every day to minimise food waste.

Vegetables, herbs, fruit and berries

We use the best Finnish seasonal ingredients whenever possible.

We only use Finnish meat that is produced with consideration for animal welfare and the values of sustainable development. Our main meat supplier is Atria.

Milk products

We use Finnish dairy products. We buy cheeses from Helsingin Meijeriliike, a dairy based in the Viikki district of Helsinki, and ice cream from Suomen Jäätelö.

Fish and shellfish

We follow S Group’s fish policy and never use fish or shellfish that are endangered, threatened or subject to overfishing in our dishes.

Breads and other baked goods

We bake sweet and savoury goods every day. In our sweet pastries, we use the best ingredients of the season and all our bread is made with sourdough.

We collaborate closely with local S-Market stores to minimise food wastage. For example, we use surplus and overripe bananas from local S-Market stores for baking banana bread. Our partner is Konditoria PH7 in Tuusula.

Coffee and tea

The coffees and teas we use are certified for responsibility. Our main partner is Robert Paulig Roastery, an artisanal roastery based in Porvoo.
